Living With It

Without the rack it works as a small baking pan. Choose a tin that leaves about 5 cm of space around the joint or bird, so hot air circulates and the skin crisps instead of steaming. A 4 to 5 kg turkey or large chicken needs a big, deep tin, while a small tin suits a pork tenderloin, a tray of vegetables or a crumble for two. For crisp roast potatoes, heat a little oil or goose fat in the tin in a hot oven first, then add parboiled potatoes and turn them halfway through.

Resting meat on sliced onions or carrots lifts it out of the fat and gives you a ready base for gravy. When the roast comes out, rest it on a board and make gravy straight in the tin, scraping up the tasty browned bits with a wooden spoon. Use oven gloves, as handles get very hot. Let the tin cool before washing, because plunging a hot tin into cold water can warp the metal.
